If you're annoyed by the Google assisstant you've already turned off nagging you to turn it back on you can fix that by:

1. Going into settings
2. Go to 'Apps'
3. 'Default apps'
4. 'Digital assistant app'
5. Then press 'Default digital assistant app (but not the cog icon next to it),
6. And set it to 'none'
7. Sigh with relief.
