Weekend of a Champion
Roman Polanski follows Jackie Stewart over a weekend at Monaco. They later did a catch-up interview that I think's on Youtube too.
McLaren
Not a great doco, but I like the story, and with Brabham gone it's the closest there is to an Australian team.
There's a doco about the development of turbo engines that seems to have all sorts of different titles. In the film it's called Turbo: Once Round the Block, but you can find it one Youtube searching for 'Formula 1 Turbo Engines'.

The Grid - An episode of the BBC show Horizon from 1981, mostly following Williams in the ground effect / turbo era.
The Team - A Season With McLaren is a seven-episode series following McLaren in 1993. This one's pretty good, featuring Ayrton Senna in his last year at MCL, and Mika Häkkinen at his first.
There's a series on Benetton in 97 too, called A Year in the Fast Lane.
Formula 1: Drive to Survive - Popular Netfix show starting in the 2018 season, now in it's fourth series. Gets a bit creative with events though.
