Not a great doco, but I like the story, and with Brabham gone it's the closest there is to an Australian team.

There's a doco about the development of turbo engines that seems to have all sorts of different titles. In the film it's called Turbo: Once Round the Block, but you can find it one Youtube searching for 'Formula 1 Turbo Engines'.

The Team - A Season With McLaren is a seven-episode series following McLaren in 1993.
